Abstract

The queue is a big challenge in supermarkets for consumers in São Paulo, who are increasingly demanding and have less time to do their shopping, due to their work schedule, family and other demands, but the option is always to look for the nearest supermarket, with a variety of , quality and best price. Contextualizing the importance of the supermarket in people's daily lives, this study analyzes the processes to verify the possibility of reducing the queue that forms at the bakery and impacts supermarket cashiers at peak times. A technical visit to the site was carried out to collect data indicating intervals in arrival time, waiting time in line and service. With this data, it was possible to create the current model to process in the Arena simulation software. After carrying out the processes in the simulation system, according to the results presented, it was concluded that the bakery's service is the bottleneck, as the two attendants are overloaded, one hundred percent busy. According to the process carried out in the simulation system with three attendants, there were improvements in waiting time and consequently a reduction in queues. The objective of this study was carried out successfully, the indicators propose the hiring of another employee to serve the bakery, with three attendants, showing improvements in waiting time and reducing the queue.
