Efficiency and competitiveness are essential in the food sector, especially in inventory management, a crucial factor for the success of food manufacturing plants. Many companies face challenges in optimizing operational processes, leading to inefficiencies. This study identified significant bottlenecks, particularly the waiting time for the manual palletizer, which directly impacted storage operations. To assess and propose improvements in inventory management at a food factory located in the eastern region of São Paulo city, Queueing Theory and Arena® software were used to optimize the flow of operations. The quantitative approach involved daily monitoring of the average time spent in each process and simulating these processes to identify bottlenecks and test potential improvements. The results showed that the storage was operating at 90% of its capacity, with an average waiting time of 14 minutes, highlighting the need for interventions. Based on this study, it is recommended to restructure the warehouse layout, adopt Just-in-Time processes, and automate the palletizer to minimize bottlenecks, improve operational efficiency, reduce costs, and increase competitiveness in the food market..
